RECIPE: Cookie Dough Bites

Monday, 17 April 2017

This would have to be by far one of my favourite recipes I have ever created. Cookie dough is one of my favourite naughty things to eat. So in my attempt to overcome my sugar addiction, I created this little bite that is full of natural fats, protein and energy, is raw, refined sugar-free and vegan!

  • 1/2 cup of cashews
  • 1/2 cup of macadamias
  • 1/2 cup of dates (soaked in boiling water just covering surface for 10 minutes)
  • 1 tbs vanilla essence/paste/beans
  • 1/3 cup of natural sweetener (I used maple syrup)
  • 1/3 cup of nut butter (I used peanut butter)
  • 1 cup of cocoa nibs/chocolate chips
  • 1/3 cup of protein powder
  • 1 cup+ of flour (plain, coconut, almond meal, etc.)
  • 2 blocks of dark chocolate

  1. Soak cashews in boiling water for 5 minutes, drain thoroughly, blend in food processor until very smooth (this may take over 15 minutes) and add to large mixing bowl
  2. Soak dates in boiling water (just covering the surface) for 10 minutes, add to food processor and blend. Once smooth, add vanilla essence and natural sweetener, blend again until well combined and add to mixing bowl
  3. Add peanut butter to mixing bowl and combine all three well, until smooth
  4. Add protein powder and mix thoroughly
  5. Add cocoa nibs/chocolate chips
  6. Slowing add flour spoonful at a time until dough like consistency
  7. Roll into small bite size balls and freeze for 3-24 hours
  8. Melt chocolate blocks using double boiling method until smooth, remove from heat
  9. Quickly roll each ball in melted chocolate, coating all sizes, and return to freezer
  10. Freeze for up to 3 months!

RECIPE: Choc Protein Balls

I am a crazy addicted sweet-tooth and always craving something sugary and chocolate. So in an attempt to cut down on un-natural, refined processed sweets, I created this quick energy ball that is full of natural fats, raw, vegan, refined sugar-free - with a little protein kick and sweet chocolately taste.

  • 1/2 cup of almonds
  • 1/2 cup of pepitas
  • 1/2 cup of any other nut of choice (I chose macadamias for a smooth, creamy taste)
  • 1/2 cup of dates (soaked in boiling water for 5 minutes)
  • 1 cup of oats (my mix also included quinoa flakes)
  • 1/2 cup of coconut (desiccated, shredded, however you like!)
  • 1/3 cup of bran
  • 1/2 cup of organic cocoa powder
  • 1/3 cup of protein powder
  • 1/2 cup of natural sweetener (I used honey - not vegan, alternatively could use maple/agave)
  • 1/2 cup of natural nut butter (I used peanut butter)
  • 1/3 cup of chia seeds
  • 1 block of dark chocolate
  1. Combine nuts in a bowl and cover with boiling water for 10 minutes. Drain thoroughly. Blend in a food process and empty into a large mixing bowl
  2. Blend dates (and water soaked in) in a food process - tip: once smooth, add vanilla essence and honey - will enhance the sweet caramel flavour of the dates and prevents a mess later! Add to large mixing bowl
  3. Blend oats, coconut & bran in food processor for 20 seconds - tip: this will make the dry component finer and at the same time, cling to the sticky residue of the dates/nuts and make cleaning the processor easier! Add to large mixing bowl
  4. Add cocoa, protein powder, nut butter and chia seeds. Stir all ingredients together until smooth
  5. Make small bite size balls and fill a lined flat container - freeze for 3-24 hours
  6. Melt block of chocolate using double boiling method, take off the heat once smooth
  7. Dip half of each ball into the melted chocolate and return to container
  8. Freeze. Take as needed (allowing 15 minutes before eating). Can last up to 3 months!
